In the vineyards owned by Cantine Natale Gini, located in Vinci and Cerreto Guidi and in San Miniato in the village of S. Angelo, the harvest of the grapes from native Tuscan vine species is performed manually, to ensure the production of high quality wines.
To obtain an excellent wine production, the ability to make wine starting from grapes in perfect condition is of fundamental importance both for ageing and for a clean taste. Sorting in the vineyard is done by expert and loving hands, permitting progressive harvesting of the ripest grapes, and the selection of the grapes according to their condition.
Only the best grapes, harvested at the optimum time and transferred to the cellar quickly to keep them intact are immediately transformed into must, using the latest technology to preserve the environmental conditions as much as possible for the natural evolution of the wine.
Natale Gini wines are made from musts macerated on the skins at controlled low temperatures in stainless steel tanks, in order to naturally enrich the wine with organoleptic characteristics and precious preservative and antioxidant substances. The fermentation process is carefully followed up through numerous checks.
The wine from Natale Gini Cellars remains in the company's wine cellars in Vinci, where it spends the ageing period assigned to each type. Allier oak wood barrels of Marchive tonnage are used. A light toasting of the wood accompanies the wine over time without overwhelming the naturalness of the fruit.
Bottling takes place only when the wine is considered ready to be tasted.
